Recipe: Peanut Butter Cookies

This recipe is so easy to make, and even easier to let the kids get involved. It’s a family recipe that has been handed down to generations. I love it, I’ve been making them since I was a tiny tot, and now my kids are making them with me.

Warm fuzzies all over.

What do you need?

  • 1 Cup of Sugar
  • 1/4 teaspoon vanilla essence
  • 1/2 cup butter (softened)
  • 1 room temperature egg
  • 1 1/2 cups cake flour
  • 1/4 tsp salt
  • 1/2 tsp bicarb
  • 1/2 cup of peanut butter (use the one with no added sugar for a cookie that is less sweet).

Method:

  1. Pre-heat oven to 190C
  2. Cream the Butter and Sugar, add vanilla essence
  3. Add peanut butter, then egg, and beat well
  4. Sift flour, salt and bicarb together and add.
  5. Work to a dough.
  6. Make round balls about the size of an egg yolk.
  7. Press flat with a fork.
  8. Bake for 10 minutes or until golden brown.
  9. Cool on cookie racks.

Here’s how it looks when the kids are involved. I try allow myself grace to let my kids make a mess in the kitchen when they help. They are still very young, and learning to do things. So I brace myself and let them learn, and they LOVE it!

I measure and they add to the mixer, my eldest turns the mixer on and off, I’m trying to raise boys who love to cook and bake, so letting them in on everything from now is only going to help them become comfortable and confident in the kitchen in future.

My youngest is still too young to “help” so he snacks on batter and bangs the whisk.
