There’s always that night of the week when mom’s cry “I’m tired of thinking of supper, what are we making tonight?”. Well here’s a budget buster option and it’s also super easy to make.
You will need:
- Left over cooked chicken (pieces or slice of breast off a whole chicken)
- 1 x large carrot sliced
- 1 x large onion chopped
- 1 x clove of garlic
- S & P
- 1 x stick of celery (leaves included) chopped
- Chicken stock
Here’s how you make it:
Fry onions and garlic in olive oil till soft and slightly coloured.
Add carrots to fry for about a minute.
Add your chicken- if you’re using pieces, take the chicken off the bone first and break into small pieces. For a cooked chicken breast just chop into small pieces.
Add thyme to taste and Salt and Pepper, Chicken stock (add at least a litre of water with the stock for the noodles later)
Let it simmer for 20 minutes, then add your noodles. You may need to add more water as the noodles cook.
Once the noodles are soft your soup is ready to serve!
This recipe is so easy to make and you can add so many variations to it. Like a tin of cream sweetcorn, or kiddies alphabet noodles, serve it with bread and butter.
