Easy Chutney Mayo Chicken

Being as practical as I am and loving an easy recipe, I’d like to share with you one of my easiest suppers by far!

This is usually the recipe I use on a Monday night, or any other night when I don’t have the energy to think and make something involved. So I promise you, it will become a staple in your kitchen as it has in mine.

You will need:

  • Equal parts chutney and mayonaise
  • Chicken pieces, defrosted
  • Oven-proof dish with a lid or tin foil
  • Preheat your oven to 180C

Place your chicken pieces in an oven-proof dish, pack tightly if you can.

In a separate bowl stir together your chutney and mayo (I use one cup of each for six pieces of chicken)

Pour the mix over the chicken, place the lid (or tin foil) on the bowl and bake in the oven for about an hour.

When the chicken and sauce is starting to turn a golden brown colour, remove the lid/tin foil and put the grill on (you need to be vigilant now, chutney has a ton of sugars in it and it browns then burns in a matter of minutes). When the chicken is nicely browned to your satisfaction, turn off the oven and let it stand for a bit before serving with rice and vegetables.

It has tons of sauce for the rice and makes for a delicious, comforting meal.
